Widely called the champagne of cider apples and the most highly regarded North American cider variety, a bronze-russeted New York heirloom from the early 1800s. Cidermakers use it for exceptional sugar - typically the highest-gravity juice in a mixed planting, giving body and natural alcohol without chaptalization - combined with balanced acid and a nutty, honeyed depth. Its scab resistance, reliable annual cropping and top WSU productivity ratings make it one of the easiest high-value cider varieties to grow on the Olympic Peninsula.
Disease: Resistant to apple scab and cedar-apple rust - a significant advantage in the wet maritime PNW - but susceptible to fireblight. Tip-bearing habit with long willowy branches, so avoid heavy heading cuts. Not self-fertile. WSU rates it best-in-set for bloom density (4.7/5) and productivity (3.9/5) with the largest fruit (2.83 in).
Discrepancies: Bloom: nurseries describe it as early-to-midseason (~2), but WSU records 4/19, tied for the earliest bloom in its 77-cultivar database - recommended 1 per WSU. This matters practically, since it means Golden Russet will not overlap the late bittersweets (Brown Snout, Stoke Red) and needs an early-blooming pollen partner such as Hewes Crab. Sugar: WSU 15.4 Brix / SG 1.061 vs MSU Montana 18.2 Brix / ~1.075 - recommended the WSU figure for planning here, as the drier Montana site concentrates sugar. Origin (New York vs derivation from an English russet) is disputed in the literature and left as such.
